I love sbrisolona cake... it is so rustic and crispy... a delight. The best combination for me is a slice of sbrisolona dipped in hot chocolate ... the end of the world. Well, as I love so much this sweet, today I tried to create it in the light and vegan version, without butter. The result is fantastic, the cake is much lighter than the original, but the taste is fabulous and comparable. Obviously I enjoyed it with a cup of hot chocolate!

Today in the Netherlands the sun is shining, although the day is cold. We went out this morning for a walk outdoors, trying to store as much as possible Vitamin D and then stopping to taste a cup of steaming coffee together with some delicious chocolates bought in a chocolate shop near here. I love the combination of coffee and chocolate ... I find it the best treat ever! Hello everyone!
Sorry for the long absence from the blog, but these weeks have been very stressful and we were often away during the weekends, in Portugal, where the temperature is mild and the sun is warm. Okay, tomorrow we have been invited by our friends for a lunch and I would love to bring a cake ... so today I could only practicing and try to make this simple and delicious pears and chocolate cake, with no butter and no eggs. Finally also in Holland there are a lot of strawberries! Because of the cold weather they were late, together with the summer that is not here yet. Anyway I love strawberries and of course I decide to make a cake with this sweet and juicy fruit, in a healthy version, without added fats and sugars, only with natural ingredients. Here I am with a new recipe perfect for breakfast. I finally managed to create a sweet soft consistency similar to a plum cake, perfect for dunking in milk in the morning or as a healthy snack. I used peaches, because they are a seasonal fruit, and because I love them, but I think you can also use other fruits according to your taste and preference. |
