Today I want to share with you a recipe for these tasty bites with dried apricots and chocolate. They are delicious and healthy, ideal to satisfy a sweet craving or after lunch with a good coffe coffee.
Dried apricots can be found in every supermarket in the department of dry fruits. Look at the label and choose one type without added sulfites.

Dried apricots can be found in every supermarket in the department of dry fruits. Look at the label and choose one type without added sulfites.
Ingredients for about 25 bites
100 gr of dried apricots
the juice of one orange
half teaspoon of ginger
150 gr of whole flour
80 gr of coconut powder
2 tablespoons of coconut oil (or other light oil)
70 gr of vegetal milk
50 gr of dark chocolate for garnish (I used 99%)
Method:
In a saucepan put the chopped apricots, orange juice and ginger and let go over medium heat for a few minutes. Then blend it all with the blender until you obtain a cream. Add the milk and oil and mix well.
Toast the coconut in the pan for a few minutes until golden. Add it to the flour in a bowl. Add the apricot cream to flour and mix well with a wooden spoon.
With your hands form small balls and place them on the baking sheet.
Bake at 160 g for about 13 minutes.
Meanwhile melt the chocolate with a dash of milk.
Baked the bites and let cool for a few minutes. Dip half part of the cookies in the chocolate. Let them dry and enjoy!
