Today is a grey Saturday in the Netherlands, where the summer is still a distant mirage. So being the weekend and being bad weather, once again I decided to spend time in the kitchen and invent some good and healthy recipe to brighten this grey day.

In my usual organic supermarket I found a super fine coconut flour, fine as a regular flour and I found it fantastic to make sweets. Coconut flour has a lot of positive properties. Firstly it consists for about 58% of fibers. Then coconut flour has a low glycemic index, which keep you full for longer and gives you energy ready to use and balanced. For those who want to reduce the sugar, coconut flour has the advantage of being slightly sweet. Of course you'll have to keep adding sugar or sweeteners to your dessert, but in smaller quantities. Coconut flour is completely gluten free therefore perfect for those who are allergic.
Ingredients for about 20 cookies:
75 gr of whole kamut flour (or other whole flour)
75 g of coconut flour
12 dates
1 banana
Vegetable milk
Dark chocolate chips
Coconut flakes to decorate
Method:
Pre heat the oven to 180 degrees.
Combine the two flours in a bowl. In a blender blend the dates with half a glass of water until you create a cream. Combine the dates cream with the flour and mix well. Blend the banana with a bit of milk and add it to the dough. Stir and mix well. If too dry, add a bit of milk.
At this point you can decide if you want to add chocolate chips or not.
With chocolate chips: incorporate the chocolate into the mixture and mix well. Create the shape of biscuits and place on a baking sheet.
Without chocolate: create the shape of biscuits and pass them in coconut flakes before placing them on the baking sheet.
Bake at 180 degrees for about 20 minutes. Bon appetit!
