This weekend, the sun shines in the Netherlands and the temperature is pleasant. So pleasant that we could have a coffee outside in front of the lake and enjoy the sun on our faces.
Ingredients for about 20 cookies:
200 gr of whole flour
100 gr of almond flour
The juice of half orange
Orange and lemon zest
70 gr of honey or maple syrup
50 gr of olive oil (or coconut oil)
A spoonful of cinnamon
A pinch of nutmeg
A pinch of clove powder
Few drops of vanilla essence
For the topping:
20 grams of dark chocolate
Vegetable milk
Method:
In a bowl combine all the dry ingredients (flour and spices) and mix well. Add the liquid ingredients (oil, syrup and orange juice and vanilla essence). Mix well until you have a crumbly mixture.
With the hands create the biscuits with ball shape and place them on the baking sheet pressing them a bit on bottom. Bake in oven for 17-20 minutes at 180 degrees.
While baking, melt the chocolate with the milk over low heat. Once baked, with the help of a teaspoon cover the top of the biscuits with melted chocolate and let them cool. Enjoy!
