Finally also in the Netherlands summer has begun! There are more than 30 degrees and is very hot! Not that I want to complain ... well I promised myself not to do it considering the temperatures that we have in this country for most of the year! So I enjoy these nice summer days refreshing myself with water and fresh mint and eating fruits and vegetables

So I enjoy these nice summer days refreshing myself with water and fresh mint and eating fruits and vegetables
Unfortunately with this heat fruits don’t resist for a long time, even if in the fridge, and indeed this morning I found in my fridge some bananas to be consumed as soon as possible. So why not make a cake? And that’s how with very few ingredients it came out this super delicious sweet, perfect for breakfast or a snack!
Ingredients:
50 gr of coconut flour
150 gr of flour (better if whole), the type you prefer (I did a mixture of spelt flour and white flour)
70 gr of rice milk (or other vegetable milk)
4 bananas
20 gr of raw coconut sugar
20 g of dried coconut
Method:
Pre heat the oven to 180 degrees.
Blend the bananas until creamy. In a bowl combine the banana cream with the flours, mixing well. Add the sugar, the milk and the dried coconut to the mixture and stir well. Place the mixture in a baking plum-cake shape tray and bake at 180 for 25 minutes. Enjoy!
