Sorry for the long absence from the blog, but these weeks have been very stressful and we were often away during the weekends, in Portugal, where the temperature is mild and the sun is warm.
Okay, tomorrow we have been invited by our friends for a lunch and I would love to bring a cake ... so today I could only practicing and try to make this simple and delicious pears and chocolate cake, with no butter and no eggs. The experiment came very well, so later I will make again this delight and I will bring it to my friends’ house tomorrow!

Ingredients:
300 gr of wheat flour
100 gr of coconut sugar (or other sugar) - if you want it sweeter, you can increase the dose
250 gr of vegetable milk (or regular if not vegan)
2 large pears cut into chunks
About 50 gr of dark chocolate cut into small pieces
Vanilla extract
Chopped almonds
Method:
Pre-heat the oven to 180 degrees.
Sift the flour into a bowl, add the sugar and milk. Mix well by creating a homogeneous mixture. Flour the pieces of pear and add them into the mixture. Incorporate also most of the chocolate and mix well.
Place the mixture into a round cake pan lined with parchment paper. Sprinkle the surface with the remaining chocolate and a handful of almonds.
Bake for 30-40 minutes. Enjoy!
