This is a very simple recipe for a quick lunch, yet very good and healthy. It is ideal when you don’t have time to cook or when you have some leftover of food that you don’t know how to use!

Ingredient for 1 portion:
100 gr of boiled chickpeas
100 gr of steam spinach
50 gr of mushrooms
1 small boiled potato
40 gr of cous cous
A big handful of pumpkin seeds
Parsley
Lemon
Method:
Cook the cous cous in a pan with a bit of water. In a pan put a drop of olive and a bit of water and cook the chickpeas, the spinach, the mushrooms and the potato cut in small pieces. Stir all the ingredient well. Add the cous cous, the seeds and a big handful of persil. Enjoy warm with lemon and olive oil seasoning.
