Finally I am back from Bali in the cold Rotterdam. At least now I can enjoy all my beloved foods, my breakfast, my vegan homemade sweets and recipes…and this make me feel really good!

I came back thinking about a lot of new recipes…I have them in my mind and I want to translate in reality asap. Indeed the second day I was at home I came back from work and I immediately tried a new recipe for biscuits. Indeed we have at home this raisins cookies that my boyfriend loves, and I wanted to do the same kind of biscuits but in a healthy way of course. So here is my creation, very easy as usual and I the result satisfied me a lot. They are perfect for breakfast with a warm cappuccino or for a break with tea in the afternoon.
Ingredients for 10 cookies:
50 gr of almond
50 gr of pecans
50 gr of whole spelt flour
15 dates
2 teaspoons of chia seeds
3 tablespoons of maple/agave syrup
50 gr of raisins
Vegetal milk
Method:
Pre heat the oven at 180 degrease.
Put the chia seeds in a bowl with 3 teaspoons of hot water and leave them there for few minutes.
Put in a blender the almonds, the pecans, the flour and the dates and mix till you create a pastry.
Add the chia seeds with the water and the syrup and mix again. Add a bit of milk in case the dough is too thick.
The final dough should be quite soft but compact.
Remove the dough from the blender and knead it with the hands. Add the raisins to it and knead again.
Create 10 biscuits and place them on a hoven dish. Cook for 20 minutes. Enjoy!!
