This is for sure my favorite recipe ever!
I didn't know about the possibility to do Pizza in a pan till I met my boyfriend who taught me this amazing and fast recipe (it was a way to intrigue me :))
My Pizza is not a standard pizza because I like to use differnet type of flour and I don't put yeast..but I can ensure you that also the standard pizza in amazing cooked in this way!

Ingredients for 1 Pizza:
For the base:
100 gr of spelt flour
water
For the topping:
2 ripe tomatoes
Half eggplant
A handful of mushrooms
half zucchini
Basil
Method:
Mix together the flour with a bit of hot water till you obtain a soft dough.
Roll out the dough and mould the shape accordingly to the size of your pan.
Cut the tomatoes in small slices and cook them with some drops of olive oil and basil till they become soft, almost a sauce (I like to leave some big pieces).
Cut the eggplant and the zucchini in small slices and grill them in a hot pan together with the mushrooms till they are crunchy.
Spread a bit of olive oil in a round big pan and place your pizza base inside. cook for 5 minutes on high flame.
When the base starts to be a little bit burned on one side, turn it on the other size and cook on a low flame for 10 minutes. At the same time top the upper side of your Pizza with the tomatoes sauce and all your vegetables slices.
Add basil and serve. Enjoy!
