I am in Portugal enjoying a long week-end thanks to a Dutch bank holiday. Unfortunately today is a very windy day, so we basically spent all day going around with the car, shopping a bit and eating and now I have a bit of time to upload this recipe that I like very much.
I am in Portugal enjoying a long week-end thanks to a Dutch bank holiday. Unfortunately today is a very windy day, so we basically spent all day going around with the car, shopping a bit and eating and now I have a bit of time to upload this recipe that I like very much.
These mini cakes made by oats and banana are perfect for breakfast, especially together with a hot mug of milk and cacao. The recipe is very simple and it is made by very few ingredients!
Ingredients for 15-20 mini cakes:
1 ripe banana
100 gr of whole flour
100 gr of oats
100 gr of dry coconut
15 dates
250 ml of Provamel coconut rice milk (or other vegetal milk)
Few drops of vanilla essence
Method:
Pre heat the oven at 180 degrees,
Put in a blender the banana, the dates and the milk and mix till you obtain a creamy texture.
In a bowl put all the dry ingredients (flour, coconut and oats) and stir. Add the cream and stir well till everything is well mixed. Add few drops of vanilla essence.
Now that your dough is ready, create how many small cakes you can (you can decide about the size) and put on top of each a banana coin.
Cook in the oven for 15 minutes. Enjoy with a cup of hot milk and cacao!
