I will keep it simple and I will propose you one of my favorite recipe: Vegan Lasagna!

I will keep it simple and I will propose you one of my favorite recipe: Vegan Lasagna!
1 avocado ready to eat
Half eggplant or zucchini
1 big tomato
1 cup of basil
Pumpkin seeds
4 layers of brown Lasagna pasta
Method:
Mix together the avocado with the basil till you obtain a cream consistency.
Cut the zucchini (or eggplant) in thick layers and toast them for few minutes in a hot pan, till they become a bit crunchy.
Cook in boiling water the 4 layers of pasta, but keeping them "al dente"
Create your lasagna putting one layer of pasta, one layer of creamy avocado, un layer of zucchini and tomato and repeat another time. Finally toast the pumpkin seeds for a minute or so in a frying pan and put them on top your Lasagna with a bit of basil.
