Today I created the ultimate cookies ever! Super healthy, few ingredients and very good! They are perfect for breakfast but also for a tasty and healthy afternoon snack. This cookies are butter, egg, diary free but still very rich in flavor and taste as they contains honey, nuts and raisins. Here the recipe with indication of quantity but please consider that the quantity of raisins and nuts is very variable, you can put more or less based on your preference!

Ingredients for 10 cookies:
100 gr of whole kamut flour
12 dates
100/150 ml of water
30 gr of honey
A big handful of raisins (60 gr)
100 gr of mix of nuts of your choice, I used pecan, almonds and hazelnuts.
2 teaspoons of chia seeds (or linseeds)
Few drops of vanilla essence
Half teaspoon od cinnamon
Method:
Pre heat the oven at 180 degrees.
Put in a blender the dates with the water and mix till you obtain a cream. In a bowl put the flour and add the date cream stirring well. If the mixture is too dry add a bit of water. Add the honey and the raisins and stir again. Now you can add the nuts you have chosen. It is important that you leave the nuts whole or in big pieces. I put whole almonds and hazelnuts and I broke the pecans in 2 pieces. Stir well till everything is well combined. At the end add the chia seeds, the cinnamon and the vanilla essence and stir well.
Create the cookies with the help of a tablespoon and cook in the oven at 180 degrees for 20 minutes.
