Today here is an autumn day, it's raining, it's windy and it's all gray. When is summer coming in the Netherlands??? Well anyway to cheer up the day I decided to do another experiment in the kitchen, a beautiful cake that reminds me of summer and its flavors: a cake with coconut and banana!
Today here is an autumn day, it's raining, it's windy and it's all gray. When is summer coming in the Netherlands??? Well anyway to cheer up the day I decided to do another experiment in the kitchen, a beautiful cake that reminds me of summer and its flavors: a cake with coconut and banana!
For the base I used a mixture of whole spelt flour and coconut flour which gives the dessert a unique flavor. Coconut flour is very versatile, perfect to make even soft cakes or biscuits (I'll put the recipe even those!)
Ingredients:
for the base:
100 gr whole spelt flour (or other whole flour)
100 gr coconut flour
15 dates
water
vegetal milk
for the banana cream:
2 banana
5 dates
vegetal milk
blueberries
for the topping:
2 banana
blueberries
Method:
Pre heat the oven at 180 degree.
For the base: mix together the whole flour and the coconut flour. In a blender mix together the dates with a glass of water till you obtain a creamy consistency. Add the dates cream to the flour and still well. If the mixture is to dry add a bit of water or vegetal milk. Keep stirring till you obtain a soft and elastic dough.
For the banana cream: bland all together the banana, the dates, the blueberries and a bit of vegetal milk till you obtain a cream.
Now you can spread your dough in a baking tin (I used a rounded one, 23 cm). Pour the banana cream on top and spread it homogenously.
Now you can top with banana slices, blueberry and a bit of coconut powder.
Cook in the oven at 180 degree for 25 minutes. Enjoy!
