Today is a special day as it is 2 years that my boyfriend and I are together. To celebrate this special day we decided to do anything special but small normal things that we love and make us feel good.

First of all we had an amazing breakfast: coffee, tea, cereals, jam, rice milk and lot of juicy fruits like mango (my favorite), cranberries and raspberries, banana and pears.
Then to celebrate this day I decided to prepare a new cake for him with chocolate of course as he loves it in the cakes. I prepared the cake yesterday afternoon and of course it didn’t resist till today, but we had it yesterday evening after the dinner.
This new cake is so good…I think it is the best that I made so far. It is so chocolaty and tasty! You can enjoy it as a dessert after dinner with a scoop of vanilla ice-cream. The icing on top is a banana-dates icing. The cake is amazing even without it, but the icing add a more sophisticated flavor and it is perfect if you want surprise your guests and friend! Of course it is 100% natural with no refined sugar, no butter, no diary and no eggs. And in addition it is very quick and easy to do.
Ingredients:
For the cake:
120 gr of almond meal (you can make your own by grinding 120 gr of almonds in a food processor until it make a flour-like consistency)
60 gr of whole spelt flour or oat flour
4 tablespoons of raw cacao
3 teaspoons of chia seeds or linseeds
15 dates
50 gr of pecan nuts
Rice milk or almond milk
3 tablespoons of maple syrup
For the icing:
1 ripe banana
4 dates
Rice milk
Method:
Pre heat the oven to 180 degrees.
Place the chia seeds in a bowl with 9 teaspoons of water and leave them there for a while.
Combine together the almond flour with the spelt (or oat) flours and the cacao powder. Put the dates and a bit of rice milk in a mixer and blend it you obtain a gooey creamy texture. Pour it in the bowl with the flours and mix well. Add the seeds with the water and the syrup and still again. Put the nuts in the mixer and blend for a while, just to break them in small pieces and add them to your mixture. Stir well and add a bit of milk if the mixture is too thick. Pour the mixture in a greased baking tray and bake for 15 minutes.
In the meanwhile you can prepare the icing. Place the banana, the dates and a bit of milk in the mixer and blend till you obtain a creamy consistency. Be careful with the milk, the icing shouldn’t be too liquid.
When the cake is ready, remove from the baking tray and pour the icing on top. Add chocolate flakes as finishing touch and enjoy!
