My boyfriend loves sweets, he loves biscuits, cakes and especially chocolate. At the same time he is also very picky when it comes to nutrition and alimentation. He is working out every day and he pays a lot of attention on foods and fitness. But he loves chocolate and he cannot give up with sweets. So we decided together to try a new cake, of course with chocolate. And the result is amazing. No butter, no milk, no egg, no refined sugar. Only 100% dark chocolate and other natural ingredients. It is perfect, the taste is amazing guys and nobody will understand that is a vegan cake! This cake is an ideal after dinner sweet, or with a cup of tea or coffee. The base of the cake is delicious, you can us eat for other type of cake or sweet. It is very tasty and indulgent as it is made essentially by nuts, for this reason I am already thinking to a new lither version of the recipe for other type of cake and sweets.Fai clic qui per effettuare modifiche.
Ingredients:
For the base:
200 gr of almond flour
50 gr of pecans
15 dates
2 tablespoons of maple syrup
For the chocolate cream:
150 gr of dark chocolate (at least 70%)
250 gr of soft tofu
2 pears
Method:
Pre heat the oven at 180 degrees.
For the base: place the almonds and the pecans in a food processor and blend until a sticky flour forms. It is more than a flour, but not as sticky as a nut butter. This should take a couple of minutes. Then add the remaining ingredients for another minute. Remove the mixture form the blender and mix it with your hands; you can add a bit of water to make it more sticky.
Grease with a bit of olive oil a backing tin for cake and fill it with the pastry mixture, using the hands and a spatula to spread it all around the tin and to compress the mixture so that is nice and thin.
For the cream: melt the chocolate in a water bath. Place in a food processor the soft tofu and the chocolate and bled till you create a soft cream. if it is not sweet enough you can add some agave syrup. If it is too think you can add a bit of almond (or vegetable) milk. Spread the chocolate cream inside the base of the cake and top it with slices of pears
Cook in the oven at 180 degrees for 20 minutes.
