Hello everyone! I finally managed to achieve a healthy and simple recipe for the famous Cantucci biscuits, typical Italian biscuits from Tuscany which I adore especially dipped in coffee in the morning! Not only they are great for breakfast, but they are also perfect for an afternoon snack with a cup of hot tea! They are very easy to make and can be stored for several days in a jar.
Ingredients for about 15 cantucci:
100 gr of whole flour
80 gr of chopped almonds
20 gr of potato starch
50 gr of whole almonds
Half a teaspoon of cinnamon
Half a teaspoon of ginger
4 large dates
Vegetable milk
One tablespoon of brown sugar coconut (or brown sugar) – you can use more sugar depending on your taste
Method:
Combine all dry ingredients. Blend the four dates with a bit of vegetable milk until you obtain the consistency of a creamy sauce. Combine the creamy sauce to the dry ingredients and mix well. If the mixture is too dry, add a bit of milk, but be careful not to overdo it, the final dough should be firm and compact.
Create a loaf, as pictured below and bake for 15 minutes at 180 degrees. Let it cool on the baking sheet. Cut into oblique strips (the typical shape of cantucci) and bake again for 10 minutes. Enjoy!
