Hi everyone. Today is a sunny day in Rotterdam, even if very windy, and I am very happy because my recipe for Raisins cookies has been mentioned on an online vegan paper (VeganEz). It is a small thing but for me a big joy as I love when my recipes are appreciated and shared with other people.
In addition a colleague of mine told me that her girlfriend tried my coconut biscuits and they both loved them! This small things make me so happy! I hope that she will love also this recipe! In this post I want to present you a delicious recipe for a cake. Indeed I was craving for a soft cake, like the one my grandmother used to make for me and my sister...a simple cake for breakfast or for an afternoon break. So I started thinking and putting together ingredients in my mind and at the end I ended up with this amazing cake. It became my favorite recipe, after the coconut biscuits which for me are the best ;)
The banana cake is made mostly by banana which gave to the cake a soft texture and a very nice taste. It is perfect for breakfast together with jam, or better with a chocolate cream (I will post soon the recipe for a healthy Nutella cream!).
Ingredients:
4 ripe banana
50gr of pecans
100 gr of almond
100 gr of whole flour (I use the spelt flour for sweets)
3 tablespoon of maple syrup
3 teaspoon of chia seeds
50 gr of raisins
Method:
Pre heat the oven at 150 degrees
Put in the blender the almond and the pecans and blend till you get a flour consistency.
Remove them from the blender and place in a bowl with the flour, the chia seeds, the syrup and the raisins. In a separate bowl mash the banana and add them to all the other ingredients. Stir till you obtain a sticky texture.
Place the dough in a oiled backing dish (could be plum-cake shape, or round shape) and cook for 50 minutes at 150 degrees. Enjoy!!
