I am in Bali, spending Christmas time here surfing and enjoying the sun! This year is the first Christmas without my family, far from home and only with my boyfriend here in this paradise island. But for this reason it has been a very special Christmas, even if I miss my family a lot!

Here in Bali I am struggling a little bit with the food, since it is not so easy to find something that is fitting with my requests except fruits, vegetables, rice, potatoes. But it is fine I mean, when I come here I always enjoy the simplicity of food, very simple dishes with natural ingredients, not complicated recipes, no sophisticated ones.
And even if I am in Bali, far from my kitchen, without many of my beloved ingredients, I was able to create a fantastic, simple and very good recipe. My favourite dish here in Bali. This dish is with avocado, a versatile fruit that add health to many dishes and it is rich of nutrients. Avocado is very rich in healthy fat, Omega 3, that help lower cholesterol and improve heart health. It is also rich in protein, and for this reason is good for people that don’t eat meat. It is a source of vitamin and minerals and also of magnesium and potassium. Finally it is also an anti stress food as I have already mentioned in my post: anti stress food.
Here I present a very simple and fresh recipe with this amazing fruit.
Ingredients for 1 portion:
80 gr of whole brown rice
1 ripe avocado
10 Cherry tomatoes
Basil
Lemon and pepper
Method:
With the help of a fork, mash the avocado till it becomes a cream. If you prefer you can use an immersion mixer. Add the juice of a slice of lemon and pepper and mix again.
Boil the rice. When it is ready mix the rice with the avocado cream, the cherry tomatoes and a lot of basil.
