I never told you the reason why I live in the Netherlands. Actually my company moved here from Milano 1 year and a half ago…so let’s say that it was a forced movement. I miss a lot Italy, the weather, the people and especially the food. The simple, fresh Italian food. But I also need to say that Holland for us wins a special prize for one thing: the best ever Apple Cake. It is amazing, and my boyfriend loves it!

I miss a lot Italy, the weather, the people and especially the food. The simple, fresh Italian food. But I also need to say that Holland for us wins a special prize for one thing: the best ever Apple Cake. It is amazing, and my boyfriend loves it!
So my new idea was to do a very good Apple Cake, but with no butter, no milk, no sugar and no eggs.
Here I am with the recipe!
Ingredients:
For the base
100 gr of whole flour
50 gr of pecans
15 dates
3 tablespoons of maple syrup
Vegetal milk (rise or almond)
For the topping:
4 big apples
Raisins
Maple syrup
Method:
Pre heat the oven at 180 degrees.
For the base: put in a blender all the ingredients except the milk. Blend for 5 minutes. Add milk if you feel that the mixture is to thick and blend again for few minutes. Remove the mixture form the blender and mix it with your hands; you can add a bit of milk water to make it more sticky. Grease with a bit of olive oil a backing tin for cake and fill it with the pastry mixture, using the hands and a spatula to spread it all around the tin and to compress the mixture so that is nice and thin
For the topping: cut 2 apples in small slices and place them in a pan with a bit of water, raisins and 2 tablespoons of maple syrup. Cook till the apples are very soft. When they are soft mix everything with a mixer to create a cream, a kind of jam. Spread the apple cream on the cake base.
Cut the other 2 apples in small slices and place them on top of the apple cream together with some raisins.
Cook for 20 minutes at 180 degrees and Enjoy!!
