Hello everyone! Today I propose you a salty recipe, a pie with my beloved artichokes. This recipe is delicious freshly made, but it is also amazing the day after, to bring to the office as take away lunch! Here I propose you a vegan version with tofu, but, instead of it, you can also use a creamy cheese like Ricotta.
Ingredients:
For the dough:
150 grams of whole kamut flour (or any other meal)
2 tablespoons olive oil
water
For the filling:
4 artichokes, cleaned and boiled
2 medium boiled potato
200 grams of tofu
seeds, pepper, turmeric
vegetable milk to taste
crushed bread
Method:
Pre heat the oven to 180 degrees.
For the dough, combine the flour and the oil and mix with a little of water until you get a firm and elastic dough.
For the filling: In a bowl combine the tofu (that you have crushed in the mixer), the potatoes cut into small pieces, the artichokes, a handful of pumpkin seeds, pepper and turmeric. Mix and blend all the ingredients together. Add a little of milk if judged the filling too thick.
Roll out the dough with a rolling pin and lay it in a backing pan, leaving the edges very high.
Spread the filling evenly into the pan, lower edges of the dough and sprinkle the surface with crushed bread.
Bake for 25-30 minutes at 180 degrees. Enjoy your meal!
